We need to be able to translate email notifications to customers... and resellers

I am also asking for the ability to translate the values for "Server Date". - for example "Thu, Mar 14, 2024, 13:41"

You are able adjust the format the date format by following the steps HERE. If this is not what you have in mind, please do open another feature request to better explain what you would like to see in JetBackup.
